Vegan Blueberry Muffins

Soft, tender blueberry muffins made with simple ingredients


Here at Stonehaven we absolutely love these easy vegan blueberry muffins. They aren’t only amazing directly out of the oven but they are amazing even after they have been frozen. I often times quadruple this recipe and place them in a gallon freezer bag being super easy to warm up for a quick breakfast or snack.

One of my favorite little kitchen helpers for making these muffins is my reusable silicone muffin liners. (affiliate link) I LOVE how easily the muffins release from them and how simple they are to reuse.

INGREDIENTS

  • 1 Cup Coconut Milk

  • 1 teaspoon apple cider vinegar

  • 2 cups organic flour

  • 2 ½ teaspoon baking powder

  • ¼ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup + 2 tablespoons organic sugar

  • ¼ cup + 2 tablespoons avocado oil

  • 1 teaspoon vanilla

  • 1 ½ - 2 cups blueberries


Directions

  1. Prepare the coconut milk - Stir the coconut milk and apple cider vinegar together and let it sit for about 5 min.

  2. Mix the dry ingredients - Whisk together the flour, baking powder, baking soda, and salt

  3. Mix the wet ingredients - In a separate bowl, combine the sugar, oil, vanilla. and the coconut-milk mixture

  4. Combine - Add the wet ingredients to the dry ingredients and stir just until combined. Don’t overmix

  5. Add the blueberries - Gently fold the blueberries into the batter

  6. Bake - Divide the batter between 12 muffin cups, filling each about ¾ full. Bake at 370°F for 20-25 minutes or until a toothpick inserted into the center comes out clean, or the top should be spongy or bounce back.

  7. Cool - Allow the muffins to cool in the pan for about 5 minutes before transferring them to a cooling rack. At this point you can also remove the silicone muffin molds to reuse them for increasing the quantity.

I absolutely love using these reusable silicone muffin liners! They make baking muffins so easy, and I love that I don’t have to keep buying disposable paper liners. The muffins pop out easily, and cleanup is a breeze. Of course they take a little longer to clean compared to just throwing the liners away but well worth it that I don’t have to keep purchasing liners or our dog eating them.
